Bailey’s Banoffee pie, an Irish twist on a classic treat

The perfect kick to the much-loved classic, this takes banoffee to a whole new level! Here’s the recipe.

INGREDIENTS

  • 250 g digestive biscuits, crushed
  • 100 g butter, melted
  • 400 g tin Caramel Treat
  • 3 ripe bananas, sliced
  • 250 ml double cream
  • 3 tbsp Baileys Irish Cream liqueur
  • 1 flake chocolate, crumbled
  • 2 tbsp chopped peanuts or almonds
  • You will also need 18 cm loose-based cake tin, lightly greased

INSTRUCTIONS

Mix the biscuits and butter together in a bowl. Press mixture into the base of the tin and work up the sides of the tin. Chill for 10 min.

Stir the caramel in a bowl to loosen. Spoon on to the chilled base and smooth the surface. Add the banana, reserving a few slices for the top.

Whip the cream until thick, then gently stir in the Baileys liqueur. Dollop on top of the bananas and chill pie for 20 min.

Remove the pie from the tin. Decorate with the reserved slices of banana, flake and chopped nuts.
