Glühwein Recipe

Traditionally made with a hearty red wine heated and spiced, glühwein (or mulled wine) is popular in the chilly northern climes of Europe.

The mug
Serve your glühwein in a mug with a brim that is wider than the base. This will prevent the spices from getting in your way. Choose ceramic or porcelain to keep it hot while protecting your hands from the heat.

The nitty-gritty
Many recipes call for ground spices, leaving a gritty residue. Use whole spices, which are easier to strain. Toast them first, for intense flavour.

The garnish
A garnish adds rustic flair. Try cinnamon sticks, orange slices, whole spices (such as star anise) or berries.

The temperature
Make sure the wine stays hot. The scent of the spices adds to the experience; these aromas are only released when heated. We recommend making your glühwein in a slow cooker; but if you don’t have one, it does just as well on low heat on the stove.

Glühwein recipe

INGREDIENTS

  • 750 ml red wine
  • 1 orange
  • 750 ml orange juice
  • 1 tbsp ground cinnamon
  • 1 tbsp ground nutmeg
  • 1 tbsp ground ginger
  • 3 tbsp honey
  • 60 ml sugar
  • Juice of 1 lemon

METHOD

1. Place the wine in a large, heavy-bottomed pot over medium heat.
2. Pierce the orange a few times with a fork, then cut it in half. Add it to the wine.
3. Add the remaining ingredients and simmer for 5 minutes, constantly stirring with a whisk. Do not let the wine boil.
4. Reduce the heat and keep the wine just below a simmer for 45 minutes.
5. Ladle your glühwein into mugs and serve hot.


Toasted coconut marshmallow hot chocolate

So much more than a hot drink – this is a treat that you mustn’t hesitate to serve as dessert.

INGREDIENTS

  • 2 x 400 ml coconut milk cans
  • 100 g dark chocolate, roughly chopped
  • 1 vanilla pod, seeded
  • 150 g coconut marshmallows

COOKING INSTRUCTIONS

Heat the coconut milk in a saucepan over a medium heat until just simmering. Add the chocolate and vanilla, stir, and return to a simmer.

Pour the hot chocolate into a large jug.

Place the marshmallows in a large bowl and microwave for 30-second periods, stirring each time, until they become soft. Scoop onto the hot chocolate before serving.


Icy hot drink

INGREDIENTS

  • 1 T maple syrup
  • 1 cup coconut milk
  • 1 cup cream
  • 2 scoops vanilla ice cream
  • 2 scoops chocolate ice cream

COOKING INSTRUCTIONS

Divide the maple syrup between 2 tumblers.

Place the coconut milk and cream in a saucepan over a low heat and warm, whisking continually.

Divide the ice cream between the tumblers and pour over the hot coconut-and-cream milk. Serve immediately.


Hot peanut butter drink

INGREDIENTS

  • 1 L full-cream milk (use a plant-based milk for a vegan drink)
  • 100 g smooth peanut butter
  • 1 T cornflour
  • sugar or honey, to taste

COOKING INSTRUCTIONS

1. Combine all the ingredients in a saucepan and bring to a boil, allowing the mixture to thicken until it coats the back of the spoon. If the cornflour forms lumps, transfer the mixture to a blender, blend, and strain through a sieve.

2. Serve warm (not hot) or pour over crushed ice for a chilled version.


Golden latte with black pepper and maple syrup

Turmeric adds slight bitterness to the warm coconut milk, which is balanced by the spice of the black pepper. Sweetness comes from the maple syrup, while rose rounds it all off with a subtle oral note. It’s practically dessert!

INGREDIENTS

  • 1 x 400 ml can coconut milk
  • 1 cup milk
  • 1 t fresh turmeric, finely grated
  • 1 T rose-water (optional)
  • 1⁄2 t nutmeg, freshly grated
  • 1 T maple syrup
  • Black pepper, to taste
  • Dried rose petals, to garnish (optional)

COOKING INSTRUCTIONS

Place all the ingredients into a saucepan and bring to the boil. Pour into mug, crack over some black pepper and garnish with dried rose petals, if using. Serve warm.
